Asian Bok Choy Salad With Lime Essential Oil Dressing


Add Lime Essential Oil to your Asian Salad Dressing
Our garden in the Okanogan Highlands is starting to produce vegetables. The Bok Choy is ready and maturing nicely. I usually make Bok Choy Kimchi or Stir Fry Bok Choy. Today, I felt like having a salad with some crunch. I’m not usually a fan of Asian Salads that are pre-packaged in the grocery.  I was surprised on how tasty this salad was.
This salad recipe is adaptable. You can change the amount of leafy greens as well as the soy sauce and nuts. Olive oil can also be changed or vary the amount. I try to harvest Bok Choy and Russian Kale when they are young. They have a tendency to get bitter. However, the Bok Choy does retain its crunch.



Asian Bok Choy Salad With Soy and Lime Essential Oil Dressing (Single Serving)
2-3 Bunches of Bok Choy (I prefer Baby Bok Choy)
1 Bunch Russian Kale
½ Apple
1 Green Onion
Almonds
Dill




Bok Choy Asian Salad
Salad Dressing
¼ cup Olive Oil
2 tablespoons Soy Sauce
2-3 drops Lime Essential Oil

Bok Choy is packed with antioxidants. It helps our cells repair themselves. It helps with bone density because is rich in calcium. Kale is one of those “super foods.” It’s rich in antioxidants and Vitamin C. Kale supports a healthy immune system and is very good for our skin.

So are you ready to try bok choy? Pick one up from you local Farmers' Market and make your own healthy salad dressing with Lime Essential Oil. We are lucky to have 2 markets in our neighborhood. Tonasket Farmers' Market is held on Thursday afternoons while the Oroville Farmers' Market is on Saturday mornings.
